Broiler-fryers are the youngest and smallest birds, generally between three and four pounds. The breastbones are white and very spongy. If you try to make soup from this, it won’t taste really good. They can handle quick cooking methods to be thoroughly cooked.

Roasters are a bit bigger, say four to six or seven pounds, and are meant to be roasted. They’re meatier than young broiler-fryers and are a little bit older.

Soup chickens, or stewing hens, are the oldest and largest of all, say, five pounds and over, and require long slow cooking in liquid to tenderize the meat. You’ll want to cook a chicken labeled “stew hen” like this. It wouldn’t make a good roast chicken. Trust me.

You can also buy a capon, which is a desexed rooster, and these are the biggest of all (over seven pounds) but you’ll usually have to special order one from a butcher. Friends of mine who don’t like turkey always order big capons for holiday dinners.

When you buy chicken in the supermarket, the packages are usually labeled as to the kind of chicken that’s in them. Parts are broiler-fryers; roaster parts are sold as exactly that. Stew hens are only sold whole.

If you have any questions, never hesitate to ask the butchers in the meat department of the supermarket.
